Have you prepared your Eid menu yet? Don’t worry, we’ve got you. Meethi Eid is all about desserts and food. Just sit back and take notes of these drool-worthy recipes that will elevate your trolley game this Eid-ul-Fitr.
Shahi Tukray Cups
One of the desserts that you can’t go wrong with is Shahi Tukray. All you have to do is;
- In a pot add 2 tablespoons of water and then pour in the milk. The water will prevent the milk from burning. Add sugar, kewra water, and the seeds of green cardamom. Bring the milk to a boil and then lower the heat and keep simmering till the quantity of the milk is reduced to half. Keep stirring and scraping the sides of the pot in between until the milk will slightly turns yellow as it reduces.
- Add heavy cream and let it simmer for 2-3 mins.
- Make sugar syrup by bringing sugar, water, and rose water to a boil. Mix till the sugar has dissolved. Turn off the heat and let it cool.
- Remove the edges of the bread. Using a cutter or a small glass cut circles out of the white bread.
- Heat ½ cup of oil and shallow-fry the bread on both sides till golden. Keep the heat on medium.
- Chop the nuts. Heat ghee in a pan and roast the nuts till they are slightly brown.
- Dip the bread in sugar syrup for 4-5 mins. The more you keep it in the syrup the softer it will become.
- In your mini serving pots/glasses add around a tablespoon of nut mixture. Top it with some rabri. Then carefully place 2-3 circles of fried bread. Top with some more nut mixture. Decorate with edible silver leaf and serve.
Nutella Brioche Bread
Nutella Brioche Bread is a perfect addition to your Eid table. Not only it tastes delicious but it is also super easy to make. In this heat, you don’t want to be dressed up and spend your day in the kitchen preparing food. This easy and quick recipe will save you time and will impress your guests.
- In a small jug, add warm milk, caster sugar, and instant yeast and mix well. Cover and let it rise for 5-10 minutes.
- In a bowl, add egg, caster sugar, salt, and yeast mixture and whisk well.
- Add all-purpose flour, and milk powder and mix well. Now add butter, mix well, and knead until dough is formed.
- Grease with cooking oil. Cover and let it rise for 2 hours in a warm place.
- Transfer the dough to a clean surface, stretch it, and knead the dough for 6-8 minutes. Sprinkle dry flour and roll out with the help of a rolling pin.
- Now add & spread Nutella spread.
- Cut the dough into 2.5-inch thick 6 strips then stack up 2 strips on one strip and cut them into square pieces.
- On a 3”x7” inch pan greased with butter, place bread pieces and tap a few times. Now apply egg wash with the help of a brush.
- Bake in preheated oven at 180C for 15 minutes or until the skewer comes out clean.
Dynamite Chicken
Make P.F Chang’s style dynamite chicken at home this Eid. The crispy batter-fried chicken drenched in sweet and spicy dynamite sauce is a perfect dish to add to your Eid trolley. It is usually served over a bed of lettuce leaves.
- Season chicken breast pieces with basic spices like garlic powder or garlic paste, paprika (or Kashmiri chili), soy sauce, salt, and any herb.
- In a bowl prepare egg wash and on a plate mix the flour mixture for coating. Dip the seasoned chicken in egg wash first then in flour mixture, and coat thoroughly.
- Make Dynamite Sauce: Take ¾ cup mayonnaise, 4 tablespoon sriracha sauce, or less to taste, 2 tablespoon ketchup, ½ tablespoon honey, ½ teaspoon garlic powder, or paste. Mix all ingredients of dynamite sauce in a bowl. Set the sauce aside.
- Fry chicken in hot oil on medium heat until golden and crispy. You may drizzle some sauce over the chicken or thoroughly coat the chicken with sauce. Serve hot. Tada!
